“Xiao Long Bao” was invented back in the late 19th century at a little town called Nan Xiang in China. How this dish came by is pretty interesting. Back in the days, “baos” don’t contain soup, it had soup because a shop owner, Mr Huang Mingxian wanted to innovate and stand out from his competitors. With his innovation, he succeeded and attracted his competitors’ customers. Of course, now, this dish has become the iconic food in Chinese cuisine.

What is “Xiao Long Bao”? They are little dumplings with minced pork and jellified pork stock wrapped in thin flour skin. And during the steaming process, the jellified pork stock “melts” becoming the soup in the little dumplings. So just imagine when you bite it, you are eating the skin, meat and drinking the essence of it.
